*KUDU Stew Meat*
Just what you need for this weather
Kudu stew is a rich, hearty, and lean game meat dish made by slowly braising diced kudu or kudu knuckles with onions, carrots, potatoes, beef stock, and warm spices until the meat is fork-tender.
*INGREDIENTS*
1.5 kg Kudu stew pieces
2 tablespoons olive oil
2 chopped onions and 2 peeled, chopped carrots
3 cloves chopped garlic
3 tablespoons spice mix (like braai spice or paprika, cumin, and thyme)
1 tablespoon tomato paste
3 blocks beef stock
3 chopped potatoes
Salt and black pepper to taste
*COOKING STEPS:*
Heat oil in a large pot.
Brown the kudu chunks in small batches until golden on all sides, then set them aside.
Add more oil and sauté the onions and carrots until soft and golden.
Stir in the garlic, tomato paste, and your chosen spices, cooking for one minute until fragrant.
Return the meat to the pot and pour in the beef blocks (with water)
Cover the pot and simmer on low heat for about 1.5 to 2 hours.
Add the chopped potatoes in the final 45 minutes of cooking until tender and the meat falls apart.
Season with salt and pepper, then serve hot with pap, rice, or crusty bread.
