Stocked up the freezer with my Gluten Free Utterly Vegan Black Bean and Sweet Potato Chilli…was so satisfying that so many ingredients came out of my garden…the sweet potatoes are beautiful and sweet really can taste the goodness of fresh veggies…
Low Carb, Keto friendly, Diabetic friendly Chicken lasagne was also stocked up…really tasty and delicious too 😍

What do you do when you have a craving but don’t have “All” the ingredients? Improvise…use up what is available and make something amazing…it’s always fun creating something with left overs and bits and bobs in the veggie box.
I always have staples ie. Onions, cheese etc I normally have eggs but used them yesterday when I made a fried egg 🍳 savoury rice for hubby.
My craving today was a chicken wrap…didn’t have a Gluten free low carb wrap so made my own with sweet potato (🍠 from my garden)…grate sweet potato with grated onion and a few chillies(🌶️ from my garden) to combine I didn’t have eggs I used some frozen egg whites I had in the freezer and a few tablespoons of psyllium husk. Shaped and fried in a pan with macadamia oil then finished off cooking in the oven.
Every wrap needs a sauce so luckily has some cucumber and made a delicious Tzatziki sauce…always squeeze out the liquid from the cucumber before mixing with yoghurt. I added some fresh mint and my queen of herbs tarragon…really yummy addition.

Babe loves pizza…made him his fav 😍 00 flour 💯 mozzarella…we generally only get mozzarella and cheddar mix in our area 🙈 cheddar is for braai broodjies not for pizzas…
Calzone was the craving tonight..so simple to make why do we need to go out if we can have gourmet at home….👌🏻

We started an experiment growing sweet potatoes in wood chips and all I can say is Wow…so impressed with what we pulled out today. Looks like different cultivars the big white ones look like yams or the indigenous Hoekwil sweet potato 🍠 we got shoots from different people so not sure what is what 🤭 am so excited to see what the rest look like hidden in the wood chips…👩🏼‍🌾🍠🍠

Dinner tonight is a forgotten dish I’ve been craving. I adapted the recipe so it’s totally Keto friendly. Fish Pie…kingklip, Haddock and prawns in a creamy sauce with leeks, onions, celery and fennel…I added fresh spinach from the garden👩🏼‍🌾 which was a great addition. Traditionally it’s made with boiled eggs so fitting for Keto conversion and of course instead of potato mash on top I made Cauli-mash which was also from my garden 👩🏼‍🌾 🐟 🥧
What a delicious meal even my husband had seconds 😉
Not a meal I would freeze especially if it has eggs in it…best made fresh will most definitely make it again 😋😋

Keto Courgetti Spaghetti Bolognaise for dinner…was delicious 😋 improvise when you not sure what to eat…had a bit of bolognaise mince left after making Keto Lasagne today. I did add some of my chilli sauce which made it extra special and yummylicious 💃🏽😋
