Soup season is officially here🤍🥣
If you’re looking for the perfect cosy winter recipe, this creamy roasted butternut soup is a must-try. Rich, warming, and topped with crunchy pumpkin seeds for the ultimate comfort bowl.😋
👩🍳Ingredients:
- 5 cups cubed butternut
- 1 large white onion
- 1 head garlic
- 1/4 cup olive oil divided
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon unsalted butter
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- 1 teaspoon yellow curry powder
- 3 cups chicken stock or broth
- 3 tablespoons maple syrup
- 1/2 cup heavy cream
- Gaby's Sunflower seeds for serving
- Gaby's Chia Seeds for serving

Method:
1. Preheat oven to 220°C. Place chopped butternut and onion on a roasting tray. Cut the top off the garlic bulb, drizzle with a little olive oil, wrap in foil, and add to the tray.
2. Drizzle veggies with olive oil, season, and roast for 30 minutes, stirring halfway, until soft and caramelised.
3. In a large pot, melt butter and cook the nutmeg, cloves, and curry powder until fragrant.
4. Add the roasted veggies and stock, then simmer for 5 minutes. Squeeze in roasted garlic cloves to taste.
5. Blend until smooth, return to low heat, and stir in the maple syrup and cream.
6. Season to taste and serve with pumpkin and chia seeds.
