27 September 2016 - Hi everyone. We have some bad news. We have got a revised quote from Boston, and it has come in much higher than we had hoped for. We are looking at R4,750,000 for just the operation (and we need another R500,000 to get Caylum to Boston and back which gives us a total of R5,250,000). MSO are working with their partners in the US to try and get the quote reduced, but at the moment this is what we are working towards. We are hoping to have some feedback on a reduction in the next week or so.

We do feel very deflated at the moment, but we have already come so far, and have faith that God has a perfect plan for Caylum, and we will continue to do everything we can to . We have now raised R3,650,000 which in its self is a miracle!

We ask you all to please stay with us on this journey, there are bumps along the way, but we honestly believe together we WILL ."

Yummy weekend treats :)

Yummy weekend treats :)

You're in for a treat! Literally. These little ball-shaped bites are utterly delicious. Our version of the much loved . All the decadence without any of the guilt. Perfection!

DARK CHOCOLATE HAZELNUT BITES.
Ingredients available from
• 200g blanched hazelnuts
• 2 1/3 cups desiccated coconut
• 2 Tbsp ground xylitol (icing sugar consistency)
• 1/4 tsp pink Himalayan salt
• 2 free-range organic eggs
• 100g 85% or 90% dark chocolate

1. Preheat the oven to 180°C and line a baking tray with baking paper.
2. Place the hazelnuts into the oven and dry roast for 10 min or until golden brown.
3. Add the coconut, xylitol and salt to a medium sized mixing bowl. Whisk the eggs in a separate mixing bowl and add these to the coconut mixture. Stir together until combined.
4. To make the coconut balls use a heaped Tbsp of the coconut mixture and roll into balls. Press a roasted hazelnut into the centre and then re-roll so that the hazelnut is inserted firmly. Place the coconut balls in the oven and bake for 10-15min until golden brown, then set aside to cool.
5. Place the remaining roasted hazelnuts into a ziplock bag, remove the air and seal. Use a rolling pin to crush the nuts finely.
6. Pour hot water into a saucepan. Place a glass bowl over the hot water, add the chocolate and leave until melted. The glass bowl should not be in contact with the water. Remove from heat and add two heaped Tbsp of the crushed hazelnuts to the melted dark chocolate. Then set the rest of the hazelnuts aside to be sprinkled on top later.
7. Dip the balls in the melted chocolate and place on baking paper. Sprinkle on the remaining crushed hazelnuts. Set aside until chocolate has set.

How beautiful? How delicious? How perfect? YUMMO!!!

Enjoy!
