If you're in search of a tasty yet hassle-free meal, look no further than Lamb Boerewors rolls. These mouthwatering treats can be whipped up in no time.

These Lamb chops will have you smacking your lips!
"Fall off the bone" Cajun lamb chops with broccoli in a garlic butter sauce:
Step one - Marinade your lamb chops in the perfect spice mixture before grilling to perfection.

The leg of lamb is undoubtedly a timeless choice for any Christmas dinner, making it a perfect centerpiece for any festive occasion.
Now, let's dive into the process of preparing the perfect leg of lamb. In this post, I will guide you through each step, ensuring that you can serve it with utmost confidence.

You will need :

* 1.2 – 1.5 kg leg of lamb on the bone
* 15 cloves of garlic
* 5 sprigs of rosemary
* 60ml olive oil
* salt & pepper
* 2-3 medium sized onions
* 150ml red wine

Preheat oven to 200 C. Using a very sharp knife score 15 small cross cuts all over leg of lamb about 1.5cm deep. Pop peeled garlic cloves into cuts ensuring they are lodged properly. Place the rosemary sprigs into some of the garlic cross cuts. Rub olive oil all over leg of lamb and season well with Maldon (coarse) salt & black pepper. Place in a roasting dish along with peeled and quartered onions (lid off) and roast for about 30 minutes. Turn down heat to 180C, add wine to the roasting dish and cover the meat, slow cooking for another 2-3 hours or until lamb is very tender. Constantly baste the meat with the pan juices and turn every half an hour to ensure even cooking.

Once ready, remove from the pan and set aside. Use pan juices to create a gravy by adding either a crushed potato or 10ml of corn starch mixed with a bit of cold water to thicken sauce into a gravy. Serve with roast potatoes, green beans and all the Christmas trimmings.

There is something undeniably magical about the sunsets in the Karoo. This lamb neck stew is a wonderfully simple way to create a wholesome hearty meal.

prep time: 5 MINUTES
cook time: 3 HOURS
total time: 3 HOURS 5 MINUTES

Ingredients
4 Bone-In Lamb Neck Rings
2 Tbsp Lard
1 (250g) Large Onion
400g (2½ Cups) Floury Potatoes
500ml (2 Cups) Beef or lamb Stock
2 Bay Leaves
2 Sprigs Fresh Thyme
100g (⅔ Cup) Parsnip
100g (⅔ Cup) Carrot
2 Tbsp Worcestershire Sauce
½ Tsp Salt
¼ Tsp Pepper

Instructions:
1. Heat a large wide pan that you have a lid for over a medium-high heat
2. Season the lamb with salt and pepper.
3. Add the lard and when it has melted sear the lamb until golden on both sides.
4. Peel the onion, cut it in half and cut it into half-moon shapes that are around 2-3mm (⅛") thick.
5. Peel half of the potatoes and cut them into a 1-1½cm (½") dice.
6. When brown remove the lamb and set it aside then add the onions and cook for 5 minutes until they start to soften.
7. Add the potatoes and cook for 5 minutes.
8. Pour in the beef or lamb stock scraping any residue from the base of the pan.
9. Throw in the bay leaves and thyme, have a taste, and add salt as required.
10. Return the meat to the pan along with any resting juices, pop on the lid, transfer to the oven and cook at 160°C or 320°F for 1 hour.
11. Peel and cut the parsnip and remaining potato into 2cm (¾") cubes.
12. Cut the carrot into 1-1½cm (½") thick rounds.
13. After an hour remove the pan and mash some of the potatoes against the side of the pan and add the Worcestershire sauce
14. Sprinkle the larger chopped vegetables around the pan, cover with a lid and then return to the oven for another 90 minutes. Now is also a good time to have a taste and adjust the seasoning as required.
