Slow Roast Lamb Shoulder with Fragrant Rice.
Ingredients:
Lamb
1 lamb shoulder (scored)
1 white onion (sliced)
20g garlic
1 cinnamon stick, 2 bay leaves
6 cardamom pods, 8 cloves
1 tsp coriander seeds
Marinade
1 tbsp paprika + salt
Β½ tsp cumin, turmeric, black pepper
2 tbsp lemon juice
2 tbsp apple cider vinegar
ΒΌ cup olive oil
Rice
2 cups soaked rice
1 cinnamon stick, 4 cardamom pods
4 cloves, 2 bay leaves
1 tsp garlic, salt, veg seasoning
3 cups water + saffron
To serve
Red onion, fresh coriander, lamb juices
Method:
Preheat oven to 200Β°C
Mix marinade and coat lamb well marinate (3 hrs or overnight if possible)
Place onion, garlic & spices on parchment, top with lamb
Wrap in parchment + foil, add to tray with water
Roast 3 hours, topping up water hourly until tender
Rice
Fry whole spices in oil, add garlic
Add soaked rice, seasoning, water
Cook until reduced, add saffron
Steam on low 25 min
