Bring comfort to the table with hearty Vegetable Soup and fluffy Dombolo 🥣✨ Perfect for those cosy winter moments, this dish easily feeds the whole fam! 💛
Ingredients
For the Soup
500g Ritebrand soup mix
30 ml (2 tbsp) oil
1 onion, chopped
2 carrots, peeled and diced
2 potatoes, peeled and cubed
2 cloves garlic, minced
5 ml (1 tsp) paprika
5ml (1 tsp) mild and spicy curry
1 bay leaf
2 Ritebrand vegetable stock cubes
2L water
Salt and black pepper, to taste
For the Dombolo
500ml (2 cups) self-rising flour
10ml (2 tsp) sugar
2,5ml (½ tsp) fine salt
Small handful of mixed herbs, finely chopped (parsley, coriander, thyme)
50g Rama Margarine
200ml (¾ cups) water
Vegetable Soup
1. Rinse the soup mix well, cover with water and soak for at least 2 hours. Drain before cooking.
2. Heat oil in a large pot, sauté the onions until soft and golden, then stir in garlic and cook.
3. Add carrots and potatoes, stir to mix.
4. Add paprika, curry powder and bay leaves and cook for 2 minutes.
5. Add the drained soup mix and stir until even.
6. Pour in water, add the stock cubes and bring to a boil. Reduce heat and simmer gently for about 2 hours, stirring occasionally.
7. Add extra water as needed. Season with salt and black pepper, then remove the bay leaf before serving.
Dombolo
1. In a bowl, combine flour, sugar, salt and chopped herbs.
2. Rub margarine into the flour mixture until it resembles breadcrumbs.
3. Gradually add water, mixing gently until a soft, slightly sticky dough forms.
4. Shape the dough into golf ball-sized portions or scoop spoonfuls directly onto the soup
5. Cover the pot immediately with a lid and steam for 15–20 minutes until the Dombolo is cooked through and fluffy.
6. Keep the lid closed while steaming to prevent the steam from escaping.
