Skillet steak with mushroom sauce: an easy recipe packed with flavour, perfect for family dinners or a cosy night in, and guaranteed to impress every time.

Ingredients:
340 g boneless beef sirloin steak (2.5 cm thick), trimmed
2 tsp salt-free steak seasoning
2 garlic cloves, minced
½ tsp salt, divided
2 tsp canola oil
170 g broccolini, trimmed
300 g frozen peas
1 tsp fresh thyme, chopped
225 g fresh mushrooms, sliced
240 ml unsalted beef broth
1 tbsp whole-grain mustard
2 tsp cornstarch
Directions:
Preheat oven to 180°C. Season the steak with steak seasoning, garlic, and ¼ tsp salt.
Heat oil in a 30 cm cast-iron skillet over medium-high heat. Add the steak and broccolini. Cook for 4 minutes, turning the broccolini once (do not turn the steak).
Add peas around the steak and sprinkle with thyme. Transfer the skillet to the oven and bake until the steak reaches 63°C (medium-rare), about 8 minutes. Remove steak and vegetables to a plate; cover to keep warm.
Add mushrooms to the skillet drippings. Cook over medium-high heat for 3 minutes, stirring occasionally.
In a small bowl, whisk broth, mustard, cornstarch, and remaining ¼ tsp salt. Add to the mushrooms and cook, stirring, until thickened (1–2 minutes).
Serve steak and vegetables with the mushroom sauce.
