Skillet steak with mushroom sauce: an easy recipe packed with flavour, perfect for family dinners or a cosy night in, and guaranteed to impress every time.

Servings: 4
Time: 25 minutes

Ingredients:
340 g boneless beef sirloin steak (2.5 cm thick), trimmed
2 tsp salt-free steak seasoning
2 garlic cloves, minced
½ tsp salt, divided
2 tsp canola oil
170 g broccolini, trimmed
300 g frozen peas
1 tsp fresh thyme, chopped
225 g fresh mushrooms, sliced
240 ml unsalted beef broth
1 tbsp whole-grain mustard
2 tsp cornstarch
Directions:
Preheat oven to 180°C. Season the steak with steak seasoning, garlic, and ¼ tsp salt.
Heat oil in a 30 cm cast-iron skillet over medium-high heat. Add the steak and broccolini. Cook for 4 minutes, turning the broccolini once (do not turn the steak).
Add peas around the steak and sprinkle with thyme. Transfer the skillet to the oven and bake until the steak reaches 63°C (medium-rare), about 8 minutes. Remove steak and vegetables to a plate; cover to keep warm.
Add mushrooms to the skillet drippings. Cook over medium-high heat for 3 minutes, stirring occasionally.
In a small bowl, whisk broth, mustard, cornstarch, and remaining ¼ tsp salt. Add to the mushrooms and cook, stirring, until thickened (1–2 minutes).
Serve steak and vegetables with the mushroom sauce.

Potato & Bacon Puff Pastry Pie
Perfect for a hearty meal, this Potato & Bacon Puff Pastry Pie brings together savoury flavours with a golden, flaky crust. Serve it hot from the oven with a crisp green salad for an ideal lunch or dinner.

Prep: 40 mins | Cook: 45 mins

Ingredients
Main:
400g Puff pastry (2 rolls, shop-bought)
750g Potatoes, peeled and sliced 3mm thick
200g Onion, finely diced
30ml Olive oil
250g Streaky bacon, finely sliced
1 Stick celery, finely minced
2 Cloves garlic, finely minced
125ml Sour cream
1 Egg
20ml Cape Herb & Spice Smokehouse BBQ Rub

Egg Wash:
1 Egg
15ml Milk
5ml Cape Herb & Spice Smokehouse BBQ Rub
45ml Chives, finely sliced

Method:
- Prep the Oven and Potatoes: Preheat the oven to 200°C with a baking tray inside. Boil potato slices briefly until almost cooked, then drain, pat dry, and cool.
- Cook the Filling: Sauté the onion, bacon, and celery in olive oil over low heat until soft. Add garlic and cook for another minute, then allow the mixture to cool.
- Combine: Mix the cooled onion-bacon mixture with the potatoes. In a bowl, whisk together sour cream, egg, and 20ml BBQ Rub. Pour over the potatoes and toss well.
- Assemble the Pie: Roll out one puff pastry sheet on baking paper. Spread the potato mixture over it, leaving a 4cm border. Sprinkle chives and any remaining sour cream mix on top.
- Seal the Pie: Brush the border with water, then place the second pastry sheet over the filling. Press edges down to seal, trim, and crimp with a fork. Make a small cut in the centre to release steam.
- Chill & Glaze: Chill the pie for 15 minutes. Mix an egg with milk and 5ml BBQ Rub, then brush over the pie.
- Bake: Transfer the pie (still on baking paper) to the hot tray. Bake for 35-45 minutes until golden.
Serve warm with a fresh green salad.

This week’s meat feature is the bold and flavourful Caveman steak! Cooked directly on hot coals, this technique brings out an intense, smoky taste and a delicious crust. Here are some cooking tips:

Choose your coals wisely: Use high-quality, lump charcoal for the best flavour. Ensure the coals are hot and covered with a light ash layer before placing the steak on them to avoid sticking and ensure a good sear.

Direct coal contact: Place the steak directly on the coals for about 3–4 minutes per side for medium-rare, turning it 90 degrees halfway through to get an even crust. This technique gives the steak a smoky, robust flavour.

Temperature check: Use a meat thermometer to pull the steak off when it’s about 5 degrees below your desired doneness, as it will continue cooking while resting.

Rest before serving: After cooking, loosely cover the steak with foil and let it rest for 5–10 minutes. This allows the juices to redistribute, keeping the steak juicy and tender.

Honey & Mustard Chicken Recipe
Ingredients:

4 chicken breasts or thighs (bone-in for extra flavour)
1 packet of Ina Paarman’s Honey & Mustard Cook-In Sauce
2 tbsp honey
Fresh thyme sprigs (optional)
Salt and pepper to taste
Instructions:

Prep the Chicken: Preheat your oven to 180°C. Season the chicken with salt and pepper.
Mix the Sauce: In a bowl, combine the Ina Paarman's Honey & Mustard Cook-In Sauce with the honey for extra sweetness.
Coat the Chicken: Place the chicken pieces in an ovenproof dish and pour the sauce mixture over them. Add fresh thyme sprigs on top, if desired.
Bake: Cover with foil and bake for 25-30 minutes, then remove the foil and bake for an additional 10 minutes or until the chicken is cooked through and golden.
Serve: Enjoy with rice, pap, or a fresh side salad!

Chicken Meatball & Feta Flatbread with Creamy Sauce
Ingredients:
Barrett's Ridge Garlic & Herb Beer Bread Mix
Chicken meatballs
Red onion, sliced
Cucumber, diced
Fresh parsley, chopped

Creamy Sauce:
1 cup plain yogurt or sour cream
1 tablespoon lemon juice
1 teaspoon garlic powder
Salt and pepper to taste
Fresh herbs, chopped (optional)
Instructions:

Prepare the beer bread as directed.
Cook meatballs until golden.
Mix sauce ingredients in a bowl.
Slice bread, top with meatballs, onion, cucumber, and parsley.
Drizzle with creamy sauce and serve.
