🍜 Cauliflower and Mushroom Ramen Bowl
🥢 Looking for a wholesome Thursday supper idea? This Cauliflower and Mushroom Ramen Bowl is warm, nourishing and packed with flavour — the perfect way to end a busy day.
Made with veggie-based noodles, mushrooms, bok choi, carrots, eggs and a comforting broth, it’s a satisfying meal the family can enjoy together.

📝 Ingredients List:
4 eggs
4 cups (1L) vegetable or beef broth
2 carrots, peeled and julienned
200g baby marrows, julienned
250g Live Well cauliflower and turnip noodles
100g shimeji mushrooms
100g shiitake mushrooms
100g bok choi
4 spring onions, thinly sliced
Salt and milled pepper
1 fresh red chilli, sliced
Coriander, to garnish (optional)
👩🍳 Method:
- Boil the eggs to your liking. Allow to cool, then peel and halve.
- Heat the broth, add the carrots and allow to simmer for about 5 minutes. Add the baby marrows and noodles and simmer for another 4–5 minutes.
- Heat a glug of olive oil in a pan and fry the mushrooms until golden in colour. - Remove from pan and set aside.
- Halve the bok choi and fry on the cut sides for about 3 minutes in the same pan.
- To assemble, use tongs and divide the cauliflower and turnip noodles equally in serving bowls. Pour over broth and veggies and top with mushrooms and bok choi.
Season and garnish with chilli and coriander, if using. 🌶️🌿
