🍲 MIDWEEK COMFORT WEDNESDAY 🍲

Make Wednesday supper quick, comforting and full of flavour with this Chicken, Basil and Rice Pasta Stew!

Tender chicken, juicy cherry tomatoes, garlic and rice-shaped pasta come together in a rich broth, finished with basil pesto for a fresh and flavourful touch.

🛒 Get all these ingredients at Pick n Pay and have a hearty family meal ready in about 30 minutes.

🍲 Chicken, Basil and Rice Pasta Stew
⏱️ About 30 minutes
👨‍👩‍👧‍👦 Serves 4

🛒 Ingredients:
🫒 2 Tbsp olive oil
🧂 Salt and milled pepper
🍗 1 packet skinless chicken breasts, each cut into 3 pieces
🍅 1 punnet cherry tomatoes
🍲 3 cups chicken stock
🧄 3 garlic cloves, crushed
🍝 1 cup pasta rice, such as risoni or orzo
🌿 Basil pesto, for serving
🌱 Fresh basil, for serving

👩‍🍳 Method:
🔥 Heat the olive oil in a heavy-bottomed pan over medium heat.
🧂 Season the chicken with salt and pepper.
🍗 Brown the chicken all over, then remove it from the pan and set aside.
🍅 Add the cherry tomatoes, chicken stock, garlic, pasta rice and seasoning to the pan.
🥣 Bring the mixture to the boil.
⏳ Reduce the heat and simmer for about 8 minutes.
🍗 Return the chicken to the pan.
🔥 Cook for another 5–8 minutes, or until the chicken and pasta are cooked through.
🌿 Serve directly from the pan with dollops of basil pesto and fresh basil.
