π² PnP Beef Short Rib Stew for Friday Night
Rich, hearty and full of flavour, this PnP Beef Short Rib Stew is the perfect comfort meal to enjoy with family on a cosy Friday night. Slow-cooked until tender and succulent, itβs delicious served with creamy mash or steamed rice.
Serves: 6β8
Cooking time: About 2 hours
Ingredients:
* Salt and milled pepper
* About 1.5kg PnP beef short ribs
* A glug of olive oil
* 1 onion, chopped
* 2 cloves garlic, grated
* 1 sachet, 500ml, PnP umami stock, or 2 cups beef stock
* 2 sachets, 400g, PnP hearty beef stew cook-in sauce
* 2 bay leaves
* 3 sprigs rosemary
* 4 medium potatoes, quartered
* 1 packet, 400g, PnP mixed vegetable express
For serving:
* Creamy mash or steamed rice
Method:
* Season the PnP beef short ribs with salt and milled pepper.
* Heat a glug of olive oil in a large pot over medium heat.
* Brown the beef on both sides, working in batches to avoid overcrowding the pot.
* Remove the beef from the pot and set aside.
* Add the onion to the same pot and sautΓ© for 5β8 minutes.
* Add the garlic and cook until fragrant, about 1 minute.
* Pour in the PnP umami stock, PnP hearty beef stew cook-in sauce, bay leaves and rosemary.
* Stir well to combine.
* Return the beef to the pot.
* Cover and simmer for about 1β1Β½ hours, stirring occasionally.
* Add the potatoes and PnP mixed vegetable express.
* Cook for another 20β25 minutes, or until the potatoes and vegetables are tender.
* Season to taste.
* Serve warm with creamy mash or steamed rice.
