π One Pan Roast Recipe
A simple, hearty one-pan dinner packed with flavour. Juicy roast chicken, golden butternut, sweet potato and baby tomatoes come together beautifully in this easy family favourite.
Serves: 4
Prep time: 10 minutes
Cooking time: 45β60 minutes
Oven temperature: 180Β°C
Ingredients:
β’ 8 chicken pieces
β’ 3 Tbsp olive oil
β’ Salt and milled pepper, to taste
β’ 1 packet diced butternut
β’ 1 packet diced sweet potato
β’ 1 punnet baby tomatoes
β’ Handful fresh basil
Method:
1. Preheat the oven to 180Β°C.
2. Rub the chicken pieces with 2 tsp olive oil and season with salt and milled pepper.
3. Place the butternut, sweet potato and baby tomatoes in a single layer in a large roasting pan.
4. Drizzle with the remaining olive oil, season and toss to coat.
5. Top the vegetables with the chicken pieces.
6. Roast for 45β60 minutes, or until the vegetables are golden and the chicken is cooked through, with the meat juices running clear.
7. Sprinkle with fresh basil just before serving.
