Beau's - Original Handmade My interest in curing, pickling, preserving, and fermentation started in 2007 when I had the opportunity to work at a Thai restaurant.

The cuisine is entirely different to anything I did before or done after that. A lot of the food is either preserved (Sweet Chilli Sauce or Sriracha), fermented (Soy sauce, Fish sauce) or pickled (Cucumbers, mustard greens). One of the reasons for using these "cooking" methods, hundreds of years ago, is that there is not always refrigeration available and they needed a way of preserving their food

Even today when there is no need for it because most of us have got enough refrigeration and we can import almost any fresh item any time of the year, people continue to ferment, pickle and preserve. The most common items in South Africa are Biltong, bacon, beer, charcuterie, cheese, wine, and one of my favorites is, Cape Malay "Kerrie Vis". So next time you're at a Braai, and you have Biltong, charcuterie, cheese, jams and preserves while drinking beer or wine ...
