Carrot cake 💜💜

Ingredients :
3 eggs
1 cup castor sugar
1 cup oil
1 tsp vanilla essence
2 cups carrots, finely grated
1/2 cup pecan nuts, chopped
2 tsp cinnamon powder
Pinch of salt
1 1/2 cups cake flour
3 tsp baking powder
1/2 tsp bicarbonate of soda
1/4 cup water
Method :
1. Beat the eggs and sugar untill creamy.
2. Add the oil and vanilla ,beat well.
3. Add the carrots, pecans, cinnamon and salt , mix well.
4. Fold in the dry ingredients alternately with the water, mix untill well combined.
5. Pour mixture into 2 well greased round 20 cm cake pans and bake in a preheated oven at 180 for 30 minutes.
6. Cool completely and decorate with glace icing or cream cheese frosting and pecans.
Glaze icing :
1/2 cup icing sugar
1 tsp oil
2 tsp milk
2 drops vanilla essence
(Mix untill smooth )
Cream cheese frosting:
1 cup fresh cream
1/2 cup icing sugar
1 tsp vanilla essence
250g full fat plain lancwood cream cheese
Method :
1. Beat the fresh cream, icing sugar and vanilla on high speed until peaks form and set aside.
2. In a separate bowl, beat the cream cheese until smooth.
3. Add the cream cheese to the fresh cream and fold lightly untill well combined( donot overmix)
4. Refrigerate before using and decorate cake as desired.
