Juicy Meatball Recipe

Ingredients
Ingredients for Juicy Meatballs:
3 slices white bread crusts removed, diced
2/3 cup cold water
1 lb lean ground beef 85/15 fat content
1 lb ground pork
1/4 cup parmesan cheese shredded
1 large egg
3 garlic cloves minced
2 Tbsp parsley finely chopped
1 tsp sea salt
1/2 tsp black pepper
2 Tbsp olive oil to sautee
US Customary - Metric
Instructions
How to Make Meatballs:

Combine diced bread in a large bowl with 2/3 cup water. Set aside 5 minutes then mash with a fork. Meanwhile, prepare the remaining ingredients.
Into the bowl of mashed bread crumbs, add ground beef, ground pork, 1/4 cup parmesan cheese, 1 egg, 3 minced garlic cloves, 2 Tbsp parsley, 1 tsp salt and 1/2 tsp black pepper. Use your hands to stir the mixture together just until well combined. Do not overmix.
Portion onto a lined baking sheet (about 2 Tbsp per meatball - an ice cream scoop makes it easy). With wet hands, roll meatballs into 1 1/2" diameter balls.

How to Cook Meatballs:
To Sautee: Heat a large non-stick pan over medium heat. Add 2 Tbsp oil. Once the oil is hot, add meatballs to the skillet, placing them in one at a time and cook in batches to get a good sear. Sautee turning every 2 minutes (total 6-8 minutes), or until evenly browned and the internal temperature reaches 160˚F on an instant-read thermometer. Serve as is or in any recipe that calls for meatballs.

To Bake Meatballs: Place on a lined baking sheet 2" apart and bake in a fully preheated oven at 400˚F for 20-23 minutes, or until fully cooked and the centers reach 160˚F. If you want a prettier color to your meatballs, broil for the last 2-3 minutes.

Food tip of the DAY.

PORK BELLY AVAILABLE@ Ubutala Foods & Butchery

PORK BELL ROAST

INGREDIENTS

1 kg pork belly

15 g fennel seeds

5 g sea salt

100 ml olive oil

2 carrots

2 sticks of celery

2 onions

2 cloves garlic with the skin on

fresh thyme leaves

1 bottle good white wine

75 g plain flour

METHOD

Turn the oven to the highest temperature.

Using a very sharp knife score the skin down to the meat, make sure not to cut too close to the meat. Score across so that it is in small blocks.

Put the fennel and salt in a pestle and mortar and grind until the seeds are smashed and mixed well with the salt.

Pour the oil over the skin of the pork and sprinkle the fennel and salt and rub it in well so that it gets in between the squares. Make sure your pork belly is well seasoned as the salt will also help with crispiness.

Wash the carrots and celery and cut into medium pieces and place these into the base of the roasting dish.

Place in the whole garlic cloves, peel and cut the onions into large wedges and toss in with the whole thyme leaves.

Put the seasoned pork belly on top of the vegetables and then put into your very hot oven for 10 – 15 minutes until the skin of the belly starts to bubble and is golden brown.

Lower the temperature to 170°C, then roast for 1½ hours.

Carefully open the oven door and add into the tray ¾ cup of the white wine. Continue to cook for 1 hour.

When the meat pulls apart it is ready. If not let it cook until ready.

Remove from the oven and place the belly carefully on a wooden board. Allow it to rest.

Put the roasting tray directly on your stove on a medium heat plate. Add the flour and wine and stir until thickened. If the sauce is too thick add more white wine.

Mash the vegetables until it looks like a delicious thick looking sauce. If you prefer, you can strain the sauce or pour it as it is over the roasted belly.

Chicken intestines recipe
Here's a basic recipe for making Chicken Matumbo/amala:
Ingredients:
1 pound chicken intestines (cleaned and well-rinsed)
3 cloves garlic, minced
1 small onion, minced
1/4 cup soy sauce
2 tablespoons vinegar
1 teaspoon sugar
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper (optional, for some heat)
Bamboo skewers, soaked in water for at least 30 minutes
Cooking oil for brushing and basting
Instructions:
Clean and prepare the chicken intestines. You'll want to remove the inner membrane and wash them thoroughly under running water. Use a skewer or long stick to help clean the inside. Rinse until the water runs clear.
In a bowl, mix together the minced garlic, minced onion, soy sauce, vinegar, sugar, ground black pepper, and cayenne pepper (if using). This will be your marinade.
Place the cleaned chicken intestines in the marinade and make sure they are well-coated. Marinate for at least 1 to 2 hours or overnight in the refrigerator.
Thread the marinated intestines onto the soaked bamboo skewers, making sure to pierce through both ends securely.
Preheat your grill or barbecue to medium-high heat. Brush the grill grates with a little oil to prevent sticking.
Grill the Chicken Matumbo/amala skewers, turning them occasionally and basting them with the remaining marinade or additional oil to prevent them from drying out. Grill until the matumbo/amala is fully cooked and has a nice char, which should take about 15-20 minutes.
Serve the Chicken Matumbo/amala hot with a dipping sauce made from vinegar and soy sauce with minced onions and chili peppers (sawsawan).
Note: When grilling matumbo/amala, it's essential to make sure it is thoroughly cooked to ensure food safety. The intestines should no longer appear translucent, and the meat should be fully cooked through.

Method
Fry onion with oil, add the the spices .
Then add the trotters, mix until they are all coated with the spices.
Add curry paste and tomato paste.
Add enough water to cover the meat.
Cook until the gravy has thickened.
Add black pepper.
Done
