Chicken intestines recipe
Here's a basic recipe for making Chicken Matumbo/amala:
Ingredients:
1 pound chicken intestines (cleaned and well-rinsed)
3 cloves garlic, minced
1 small onion, minced
1/4 cup soy sauce
2 tablespoons vinegar
1 teaspoon sugar
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper (optional, for some heat)
Bamboo skewers, soaked in water for at least 30 minutes
Cooking oil for brushing and basting
Instructions:
Clean and prepare the chicken intestines. You'll want to remove the inner membrane and wash them thoroughly under running water. Use a skewer or long stick to help clean the inside. Rinse until the water runs clear.
In a bowl, mix together the minced garlic, minced onion, soy sauce, vinegar, sugar, ground black pepper, and cayenne pepper (if using). This will be your marinade.
Place the cleaned chicken intestines in the marinade and make sure they are well-coated. Marinate for at least 1 to 2 hours or overnight in the refrigerator.
Thread the marinated intestines onto the soaked bamboo skewers, making sure to pierce through both ends securely.
Preheat your grill or barbecue to medium-high heat. Brush the grill grates with a little oil to prevent sticking.
Grill the Chicken Matumbo/amala skewers, turning them occasionally and basting them with the remaining marinade or additional oil to prevent them from drying out. Grill until the matumbo/amala is fully cooked and has a nice char, which should take about 15-20 minutes.
Serve the Chicken Matumbo/amala hot with a dipping sauce made from vinegar and soy sauce with minced onions and chili peppers (sawsawan).
Note: When grilling matumbo/amala, it's essential to make sure it is thoroughly cooked to ensure food safety. The intestines should no longer appear translucent, and the meat should be fully cooked through.
