Why Fat Is Not the Enemy

For years, many people have been taught to fear fat — trimming it off steaks, avoiding marbling, and choosing the leanest cuts possible in the name of “health.”

But when it comes to quality meat, fat plays an important role.
Fat is where much of the flavour lives.

As meat cooks, fat slowly renders, helping to keep it juicy, tender, and rich in taste. That beautiful webbing of fat running through beef is called marbling—and marbling is often a sign of tenderness, flavour, and eating quality.
