Caciocavallo is a uniquely-shaped cheese with a very long and rich history.

We're partnering with the Italian Trade Agency of New York and their “Real Italian Cheese, Please” campaign to dive into 13 authentic Italian cheeses and other topics related to the rich and diverse cheesemaking traditions found all across Italy. And in store, every Saturday, we'll be offering a free guided tasting of authentic Italian cheeses!

Our Head Chef, Didem, grew up in the Aegean region of Turkey and we’re lucky enough to have her share her culinary heritage with us in the form of dishes like this one: Börek. In this version, flakey phyllo dough is filled with spinach and feta, rolled, topped with sesame and nigella seeds, and baked until crispy and golden. And, it’s available at our dinner window at the Huron Ave shop, today, Friday 5/29! Give us a call to reserve some or stop in ASAP. Can’t make it today? As our friends Neal's Yard Dairy say: “Eat Them or Lose Them!” Territorial cheeses, like Cheshire, Lancashire, and others, are traditional British styles of cheese that are rooted in farming and place. What does Neal’s Yard Dairy mean by “Eat Them or Lose Them”? Many of these cheeses are the last of their kind, as industrialized cheese production has made them more rare. The best way to support the hardworking makers behind these cheeses and help preserve the recipes for future generations, is to eat them! Most of the cheese in this shipment is reserved for our cheese club members’ June packages, but stop in and ask a monger what UK cheese they’re most excited about right now!

Recently, our owner, Julia, had the privilege of tagging along on Neal's Yard Dairy’s famed “Northern Run,” a whirlwind pilgrimage through England’s dairies. This routine trip is an important way for Neal’s Yard Dairy to maintain their intimate relationships with cheesemakers and select the wheels that will be aged in their maturation arches over the next several months (or, in some cases, years). We asked Cheese Buyer and Imports Manager, Dave, what his cheese pick of the moment is. He selected Langres, a little French cow’s milk cheese perfect for the increasingly hotter days.
