INGREDIENTS
Potatoes:
• potatoes, diced ¾ inch cubes (about 2 large potatoes)
• 2 tbsp extra-virgin olive oil
• 1 tsp sweet paprika
• 1 tsp onion powder
• ½ tsp sea salt flakes
• ¼ tsp black pepper
Beef:
• 1 tbsp olive oil
• 1 onion, finely diced – reserve 1 tbsp for optional garnish
• 1 lb ground beef
• 1 tsp sea salt flakes
• 1 tsp sweet paprika
• ½ tsp onion powder
• ½ tsp garlic powder
• ¼ tsp black pepper
Burger Sauce:
• 1 cup mayonnaise
• 2 tbsp finely chopped gherkins (dill pickles)
• 1 tsp dijon mustard
• 1 tbsp ketchup
• 1 tsp sweet paprika
• 1 tsp onion powder
• 1 tsp garlic powder
• 1 tbsp water, or more if needed
For Serving:
• 1 cup melty cheese (mozzarella, cheddar, and/or colby)
• Romaine lettuce, finely shredded
• ½ cup sliced gherkins (dill pickles)
DIRECTIONS
1. Preheat the oven to 425°.
2. Line large baking sheet with baking parchment paper. Add potatoes, oil, paprika, onion powder, salt, and pepper. Toss to coat. Spread the potatoes out evenly so they are not overlapping. Use 2 pans if necessary.
3. Bake 40-45 minutes or until crispy and golden, turning once halfway through.
4. Heat olive oil in a large frying pan over medium-high heat. Add the onion and cook, stirring, for 1-2 minutes until softened.
5. Add the beef and cook 4-5 minutes or until slightly browned, breaking up beef as you go.
6. Add the salt, paprika, garlic powder, and pepper. Cook for another minute. Set aside.
7. Combine the burger sauce ingredients, except the water, in a medium bowl. Add 1 tablespoon of water at a time until desired consistency is reached.
8. Divide the potatoes among 4 bowls. Top each bowl with the beef mixture, followed by the cheese. Top with lettuce, pickles, reserved onion, and a generous drizzle of the burger sauce. Serve immediately. Enjoy!
