As the evenings grow cooler, a simple, satisfying dinner can be one of the nicest parts of the day.

One combination worth trying is roasted butternut squash with white beans, garlic, olive oil, and fresh thyme.

Cut the squash into cubes, toss with olive oil and seasoning, and roast at 400°F until tender and lightly browned. Warm the beans separately with a little garlic, then combine everything and finish with fresh thyme and a squeeze of lemon.
