SAVE & SHARE 🌽 Rice Cooker Sausage & Corn Rice
Serves 2
You will need:
- 1 cup (200g) rice, uncooked
- 1 to 1¼ cups water or liquid stock
- 2 sausages with a good fat content (I used chorizo from a local butcher here)
- 1 corn on the cob, husked and broken in half
- 2 tsp paprika
- 1 tsp cumin
- 2 tsp powdered stock (skip if using liquid stock), or frozen premade sofrito (see reel below)
- Pinch of salt (if not using stock)
To serve:smashed avocado or fresh yogurt, fresh herbs (optional), leafy greens (optional)
Method
1. Add the rice, sausages, corn, paprika, cumin, and sofrito (or powdered stock) to the rice cooker.
2. Add the water or liquid stock.
3. Season with a pinch of salt if you’re not using stock.
4. Press cook and walk away.
5. Once cooked, plate up the corn and stir the flavors through the rice.
6. Divide the rice between two bowls.
7. Cut up the sausages, keeping all the juices, and place on top of the rice.
8. Serve with smashed avocado or fresh yogurt, and fresh herbs or leafy greens if you have them.
