Preserved lemons are whole lemons cured with salt and time, which transforms that sharp fresh-lemon flavor into something softer, intensely lemony, salty and savory. They’re a staple in Moroccan and North African cooking — and a little goes a long way.

The best part is how easy they are to use. Remove a piece, rinse it if you’d like less salt, and finely chop the softened peel.
